Tempura

My first attempt to cook tempura and it went well. I got this recipe on the on the internet. It is actually very easy so no more off-the-shelve tempura mix for me after this. So here's the recipe :

Ingredients:
1 cup plain flour
1 cup rice flour
1 1/3 cup ice cold water
2 tsp baking powder
1 tsp salt
2 egg yolks
1/2 kg prawns
Vegetables such as brinjal, carrot, mushroom, capsicum etc

- Sift plain flour, rice flour and baking powder.
- Add in salt.
- In another bowl, beat the egg yolks slightly and mix it with ice cold water. Stir until well mix.
- Add the egg yolks mixture into the flour mixture and stir slowly until well blend (you don't have to stir until the lumps are all gone. Stir just enough for the mixture to blend).
- Dip the vege/prawn in the mixture and deep fry.

Tips:
- Make sure the vege/prawns are all dry before dipping into the mixture.
- Shelled the prawns but leave the tail on.
- Make sure the oil is hot enough (throw in a little bit of mixture into the oil to check. The oil is hot enough if the mixture immediately floated up).
- Fry in small numbers. Do not flip more than once (don't worry. Let the oil do the work).
